Ingredients:
1 Tablespoon Olive Oil
1/4 cup (1/2 stick) butter
6-8 onions (about 3-4 pounds), sliced into half moon slices
6 garlic cloves, sliced
1 cup dry white wine or sherry
4 cups low-salt chicken broth
4 cups low salt beef broth
1 Tablespoon of Fresh Thyme, chopped
1 teaspoon Dijon mustard
1 teaspoon flour
2-3 bay leaves
French Bread or baguette, cut into small pieces and toasted
1 cup grated Swiss cheese
1/2 cup grated Parmesan
Melt butter and olive oil in heavy large saucepan over medium high heat. Add onions and garlic and saute until very tender and brown, about 45-60 minutes. Add wine and simmer until reduced to glaze, about 3 minutes. Stir in chicken broth, beef broth and mustard. Add thyme and bay leaves. Simmer 20 minutes. Season to taste with salt and pepper.
Preheat broiler. Ladle soup into oven safe bowls. Top each with slices of bread and grated cheeses. Broil until cheeses melt and bubble. Serve and enjoy!
